To talk about how the first year at Frank Pepe’s first Boston-area location has gone, I had the chance to ask Gary Bimonte, the owner of Frank Pepe's and grandson of the late Founder Frank Pepe about his experience and what he has learned. Check out the Q+A below. You know I had to ask him if he was planning any additional openings for the Boston area! Read it to find out.
Q: What do you think makes Frank Pepe’s different than other pizza joints?
Gary: It’s actually pretty simple: Grandad’s oven, his recipes, his fanatic devotion to perfection, and the absolute best ingredients available. I assure you that our tomatoes aren’t “pizza joint” tomatoes!
Q: Looking back on your first year in Chestnut Hill, what has been the most rewarding and most challenging thing about opening up a location in the Boston area?
Gary: You know, for years Boston area customers came to our New Haven pizzeria – the one my granddad opened 91 years ago (!) – and asked, “When are you going to open a Pepe’s in Boston?” Well, that was the challenge: find a spot somewhere in Greater Boston and “export” Pepe’s lock stock & barrel, the real deal. Not some watered down version using the name. For us, it had to be authentic. Most rewarding has been the overwhelming welcome we received from day one.
Q: How is the Chestnut Hill location different than your other Frank Pepe’s locations in Connecticut?
Gary: The biggest difference is that many people aren’t familiar with Pepe’s. Some hadn’t even heard of us before we opened here.
Q: Have customers' needs been different? If so, how have you adjusted to those needs throughout year one?
Gary: Bostonians are knowledgeable and very food savvy. They also live very busy, time- sensitive lifestyles. As we got to know and understand them better, we made convenience a priority with Online Ordering and a Delivery Option – both brand new for us.
Q: Do you have plans or aspirations to open up additional locations in the Boston area?
Gary: The tremendously positive response Boston has shown for Pepe’s convinced us that opening additional Pepe’s in and around Boston is a good idea. We are actively exploring several areas, looking for the next homerun. Thank you, Boston.
