I had so much fun last weekend checking out Twyrl, a wonderful restaurant in Arlington serving up fresh, handmade pasta. The restaurant is owned by Chris Furlong and his sister-in-law, Anka, who heads up the kitchen. They were inspired to open the restaurant after falling in love with a tiny bistro in Italy. I loved all of the personal touches at the restaurant — including their meatballs, which are made from a secret recipe that’s been passed down over 100 years in Chris’s family. I love finding spots like this where you can feel the passion and excitement from the owners in everything they do!
At Twyrl, they make their pasta with 100% durum semolina flour and fresh eggs — that’s it! They cook the pasta to-order and top it with fresh sauces (marinara, vodka, alfredo, creamy basil, or classic pesto), and an assortment of other toppings. Their pasta is complimented by a selection of wonderful small vineyard wines.
When I visited for dinner we started with some wonderful fresh baked bread, a crisp Caesar salad, some meatballs, and some mulled wine — which was perfect for the chilly day we visited.
Then we dove right into our pasta dishes. We tried a bunch of different dishes including the tagliatelle with their vodka sauce, Shrimp Scampi, Carbonara, and the Diavolo.
Their Carbonara is made “Roman Style,” with pancetta, an egg, pepper, and freshly grated parmesan cheese over their freshly made spaghetti. It was my favorite dish — I always love Carbonara, and when it’s made with such fresh pasta like it is at Twyrl, it’s ten times better.
As if it couldn’t get any better, I was completely wowed by their desserts. We tried their housemade cheesecake and carrot cake. I’m usually not a huge fan of cheesecake, and neither is my friend, but we cleared this plate so quickly! It was perfectly light and just sweet enough. I learned earlier that Chef Anka has a background in biochemistry, and this cheesecake especially had me thinking that it must come in handy to create dishes like this that are so perfect in their taste and texture!
We also got a little taste of the crepes, which are an upcoming addition to their brunch menu.
